Tortellini with Ricotta, Spinach, and Bacon
Ingredients
- Tortellini 10 oz
- Bacon 2 pieces
- Walnuts 0 oz
- Lemon Zest 1 tablespoon
- Lemon Juice 1 tablespoon
- Grated Parmesan cheese 1 tablespoon
- Olive Oil 1 tablespoon
- Spinach 5 oz
- Ricotta cheese 2 tablespoons
Step-by-Step Guide
Step 1
Preheat the grill. Bring salted water in a pot to a boil, add the pasta, and cook according to the package instructions. Rinse with cold water and drain.
Step 2
Meanwhile, grill the bacon until golden and crispy. A couple of minutes before it's done, add the walnuts and toast them as well. Cut the bacon into strips.
Step 3
Mix the lemon zest and juice, Parmesan, and oil in a large bowl. Season with pepper, then add the spinach, tortellini, bacon, and walnuts. Toss well, add the ricotta in small dollops, and gently mix again. Add spices to taste, sprinkle with Parmesan, and drizzle with oil.
