Tomatoes with Mozzarella and Zucchini

Ingredients

  • Tomatoes 8 pieces
  • Courgette 2 pieces
  • Garlic 3 cloves
  • Olive Oil 3 tablespoons
  • Melted Cheese 10 oz
  • Parsley 1 bunch
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Wash the tomatoes and peel them. Make several cuts on each tomato so that it forms a 'book' with six slices.

Step 2

Wash the zucchini and cut it into thin rounds about 2 mm thick. Slice the mozzarella into rounds.

Step 3

Preheat the oven to 355°F. Stuff the zucchini and mozzarella into the cuts of the tomatoes, and season well with salt and pepper. Squeeze the garlic on top.

Step 4

Grease a baking dish with one tablespoon of olive oil. Place the tomatoes in the dish and drizzle with the remaining oil. Bake for 40 minutes. Sprinkle with parsley on top.
