Tomatoes stuffed with peach, cucumber, corn, and basil salad
Ingredients
- Tomatoes 8 pieces
- Donut Peaches 2 pieces
- Cucumbers 3 pieces
- Olive Oil 6 tablespoons
- Sweet Corn Sticks 1½ cups
- Coarse Salt to taste
- Lime Juice 2 tablespoons
- Ground Black Pepper to taste
- Chopped Sage Leaves ½ cup
Step-by-Step Guide
Step 1
Cut the tops off the tomatoes and carefully scoop out the flesh and seeds.
Step 2
Chop the flesh and transfer it to a bowl. Add diced peaches, diced peeled cucumbers, corn, olive oil, and 1 tablespoon of lime juice. Season with salt and pepper. Mix and let sit for 15 minutes. Add more lime juice if needed. Add basil and mix.
Step 3
Season the inside of the tomato cups with salt and pepper, fill with the salad, and serve immediately.
