Ingredients

  • Tomatoes 5 lbs
  • Water 0 qt
  • Sugar 5 tablespoons
  • Salt 1.5 tablespoons
  • Green peppercorns 15 pieces
  • Gelatin 1 tablespoon
  • Dill 3 pieces
  • Parsley 3 stems
  • Bay leaf 3 pieces
  • 9% Vinegar 3 teaspoons

Step-by-Step Guide

Step 1

Soak the gelatin in 0.5 cup of water.

Step 2

At the bottom of a washed and sterilized jar, place 1 bay leaf, 5 parsley sprigs, and 3 cloves of garlic. Cut the tomatoes in half and place them cut side down.

Step 3

Prepare the brine from salt and sugar, bring to a boil, add the gelatin, and let it boil for 30 seconds. Pour the hot brine over the tomatoes, adding 1 teaspoon of vinegar to each jar. Place the jars with tomatoes in a pot, lining the bottom with cheesecloth or a small towel to prevent the jars from cracking. Fill the jars with water up to the shoulders, bring to a boil, and sterilize for 15 minutes.
