
Tomato Vinaigrette

Description
This is less of a vinaigrette and more of a cold tomato stew, or rather a salad based on a vinegar dressing, but often this component is referred to as a vinaigrette.
Ingredients
- Tomatoes 15 oz
- Onion ½ heads
- Lime Juice 0 fl oz
- Parsley 0 oz
- Red Wine Vinegar 5 fl oz
- Olive Oil 5 fl oz
- Coarse Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Blanch the tomatoes, peel them, and chop the flesh. Canned peeled tomatoes, such as pelati, are also excellent for this dish. You can use them either crushed or whole. If using whole tomatoes, you can break them apart with your hands into strands to maintain a nice texture. Alternatively, you can pulse them in a blender, but just lightly—don't blend them into a puree.
Step 2
Chop the parsley and slice the onion into thin half-moons.
Step 3
In a bowl, combine the oil, vinegar, and lime juice. Add the vegetables and herbs, and mix well. Season with salt and pepper to taste.
