Tomato Tartlets with Basil Oil

Ingredients

  • Whole egg 1 piece
  • Puff Pastry 5 oz
  • Fresh basil leaves 30 pieces
  • Marinated cherries 8 pieces
  • Melted Cheese 6 pieces
  • Olive Oil 4 tablespoons
  • Lemon 1 piece
  • Garlic 1 clove
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Preheat the oven to 430°F. Cut out two 10-centimeter tartlet bases from the pastry and place them on parchment paper. Brush the pastry with egg yolk and prick it with a fork in several places.

Step 2

Top with pieces of mozzarella, basil leaves, and halved cherry tomatoes. Add seasonings to taste and drizzle the basil leaves with olive oil to prevent them from drying out in the oven. Place in the oven for 8–9 minutes, until the pastry is golden brown and crispy.

Step 3

To prepare the basil oil, place the finely chopped clove of garlic, basil leaves, lemon juice, and olive oil in a blender and blend. Add seasonings to taste.

Step 4

Before serving, place the finished tartlets on hot serving plates and drizzle with basil oil.
