
Tomato Sorbet with Mint

This is a great start for dinner.
Ingredients
- Lemon 2½ pieces
- Raw cane sugar 2 tablespoons
- Passata Tomato Sauce 1 tablespoon
- Marjoram to taste
- Basil to taste
- Fresh Mint 1 piece
- Onion 1 piece
- Tomatoes 1½ kg
Step-by-Step Guide
Step 1
Peel the tomatoes and chop them finely. Also chop the onion finely. Place the tomatoes, onion, mint, basil, and marjoram in a saucepan and cook over low heat, stirring, for 30 minutes.
Step 2
Remove the herbs, cool the tomatoes, then blend them in a blender and transfer to a container suitable for the freezer. Stir in the tomato puree, lemon juice, and sugar. Place in the freezer for at least 4 hours.
Step 3
Remove the sorbet from the freezer, carefully crumble it, and serve in cups, garnished with a slice of lemon on the rim.
