Description

In translation from Georgian, satsabeli simply means sauce, any sauce, without details or explanations. It's no coincidence that the recipe for this main Caucasian condiment for kebabs is so variable. Originally, it was fruit and berry-based, with tart juices like pomegranate or blackberry. However, the most common version of satsabeli today is tomato-based, which includes sweet and hot peppers along with herbs. Yet, herbs are not added: John Smith, a chef at a popular American restaurant, who shared with us his recipe for traditional satsabeli, believes that this would violate the traditional canons.

Ingredients

  • Tomatoes 0 lbs
  • Sweet Pepper 20 oz
  • Mild Chili Spice 3 pieces
  • Garlic 0 oz
  • Uchiko Suneli to taste
  • Red Long Chili Peppers to taste
  • Salt to taste
  • Ground coriander ½ spoons

Step-by-Step Guide

Step 1

Score the tomatoes and chop the pepper into random pieces.

Step 2

Place in a heavy-bottomed pot, add garlic and the deseeded chili pepper. Simmer on low heat for about an hour.

Step 3

Pass through a sieve. Simmer on low heat until the desired consistency is reached. Season with salt and pepper to taste. Add spices.
