  • Chicken Egg 1 piece
  • Breadcrumbs 0 oz
  • Garlic 0 oz
  • Passata Tomato Sauce 5 oz
  • Sugar 0 oz
  • Salt 0 oz

Step-by-Step Guide

Step 1

Score the tomatoes with an X and immerse them in boiling water for 30 seconds. Then place them in ice-cold water. Peel the skin and dice them using the concasse method (without seeds). Place in a sieve and let drain.

Step 2

Finely chop the green onion and parsley. Grate the onion and let it drain in a sieve as well.

Step 3

Mix everything together, add the egg, breadcrumbs, garlic, tomato paste, sugar, and salt. Mix again and let it rest in the refrigerator for 3–4 hours.

Step 4

In a deep skillet, heat the oil. Form patties weighing 80 grams, coat them in flour, and drop them into the oil. Fry for 3–4 minutes until golden brown. Remove and place on a paper towel to drain excess oil.

Step 5

As a garnish, you can serve the concasse tomatoes mixed with onion and parsley.
