Ingredients
- Safflower Oil 2 tablespoons
- Onion 1 head
- Garlic 2 cloves
- Canned Tomatoes (Pelati) 30 oz
- Grated Ginger Root 1 tablespoon
- Red Wine Vinegar ½ cup
- Brown Sugar ½ cup
- Light Raisins, Seedless 5 oz
Step-by-Step Guide
Step 1
In a small saucepan over medium heat, heat the vegetable oil. Add the finely chopped onion, minced garlic, and ginger. Sauté for 5–7 minutes until the onion is soft.
Step 2
Add the tomatoes, vinegar, sugar, and raisins. Cook for 35–45 minutes until the chutney thickens and has a jam-like consistency.
