Tomato confit with Herbes de Provence

Ingredients

  • Yellow Cherry Tomatoes 20 pieces
  • Garlic 2 cloves
  • Olive Oil 0 fl oz
  • Herbes de Provence 1 teaspoon

Step-by-Step Guide

Step 1

Tomatoes with thick, tough skins can be peeled first.

Step 2

Make a cross-cut on the skin with a sharp knife, dip them in boiling water for half a minute, then into cold water.

Step 3

After such blanching, the skin will come off easily.

Step 4

Cut the tomatoes into 4–6 pieces depending on their size.

Step 5

Scoop out the core and seeds with a sharp spoon.

Step 6

If the tomatoes are not sweet, you can sprinkle them lightly with sugar.

Step 7

Arrange the wedges on a baking sheet lined with parchment paper.

Step 8

Add the Herbes de Provence and minced garlic to the olive oil.

Step 9

Drizzle the aromatic oil over the tomato wedges and place them in an oven preheated to 210°F.

Step 10

The tomatoes will dry for 3–4 hours.

Step 11

Place the finished wedges in a jar and cover with a small amount of olive oil.
