Crack the eggs into a bowl and add salt.

Place a non-stick skillet over heat and melt a piece of butter in it. You can use a fork to lift and swirl the butter around the skillet to help it spread more evenly.

Thoroughly beat the eggs with a fork. You don’t need to whip them into a fluffy foam; the goal is to mix the yolk and white into a uniform mixture. This should be done while the skillet is already on the heat. The less time the egg mixture sits before cooking, the more tender the scramble will be.

Pour the egg mixture into the skillet. Cook the eggs over high heat: wait for 5 seconds until the mixture begins to set, then gently move the mixture with a spatula, drawing an '8' shape. This will create a scrambled egg texture with small curds. If you prefer larger chunks, start using the spatula a bit later, when the mixture is almost fully set.

The scramble cooks very quickly — literally in a minute or a little more. Just remember to keep stirring with a spatula and catch the moment when the mixture is still moist but not runny.

The residual heat from the pan will finish cooking the egg mixture without overcooking it, ensuring it remains creamy. When serving, you can sprinkle the scrambled eggs with chopped herbs.
