Tender spaghetti with capers
Ingredients
- Spaghetti 20 oz
- Salt to taste
- Vegetable Oil 1 tablespoon
- Tomatoes 3 pieces
- Green Peas 10 oz
- Cream 5 fl oz
- Dry White Wine 5 fl oz
- Pickled capers 5 oz
- Sauce thickener to taste
- Ground Black Pepper to taste
- Ground Nutmeg to taste
Step-by-Step Guide
Step 1
Cook the spaghetti in boiling salted water with added vegetable oil.
Step 2
Peel the pea pods and cut them into thin strips.
Step 3
Make a cross incision on the tomatoes, pour boiling water over them, and remove the skin. Cut out the stem. Slice the flesh into thin strips.
Step 4
Heat the cream, wine, and capers with their brine until boiling, add the thickener, and season with salt, pepper, and nutmeg.
Step 5
Drain the spaghetti in a colander.
Step 6
Cook the peas in the caper sauce for 30 seconds. Add the tomatoes and spaghetti, heat for 2 minutes, and season with more salt and pepper.
