Step-by-Step Guide
Step 1
Pour the cream into the skillet and let it reduce.
Step 2
Slice the mushrooms thinly and add them to the cream. Cook over high heat.
Step 3
In a bowl, crack the eggs, grate the cheese, season with salt and pepper, add spices, and whisk everything together until well combined.
Step 4
Add the egg mixture to the mushrooms, gently stir, reduce the heat (but not too much), and cover with a lid.
Step 5
Cook, checking constantly to prevent burning.
