
Tender Curd Casserole

Description
Instead of dried fruits, you can use frozen berries. The casserole will last 4 days in the refrigerator; store it in an airtight container.
Ingredients
- Cottage cheese 20 oz
- Whole egg 4 pieces
- Sugar 0 oz
- Semolina 0 oz
- Lemon 1 piece
- Dried Turkey to taste
Step-by-Step Guide
Step 1
Squeeze the cottage cheese through cheesecloth. Pass the cottage cheese through a sieve.
Step 2
Combine the egg yolks and sugar, and whisk until the sugar dissolves and the mixture turns pale.
Step 3
Add the cottage cheese and mix until smooth.
Step 4
Add semolina and lemon zest, and mix well.
Step 5
Add the dried fruits. If they are tough, soak them in boiling water for 10 minutes beforehand.

Mix the mixture well. Let it sit for half an hour: during this time, the semolina will swell, and the cheese mixture will become firmer.
Step 7
Transfer the mixture into a baking dish — choose the one you prefer. Smooth the mixture in the dish using a silicone spatula.
Step 8
Place the casserole in an oven preheated to 320°F for 1.5 hours.
Step 9
As soon as the casserole is golden brown, check it with a skewer. If it comes out clean, the casserole is ready.
Step 10
Cool the casserole, decorate it (for example, with candied fruits or fresh seasonal berries), and serve with sour cream.
