Tender Crab Salad with Asparagus on Rustic Bread
Ingredients
- Asparagus 3 pieces
- Crab Meat 10 oz
- Celery stalk 0.3 cup
- Orange Bell Peppers 1 piece
- Green onion tops 1 piece
- Meyer Lemon Juice 4 teaspoons
- Mayonnaise 1 tablespoon
- Old Bay seasoning ¼ teaspoon
- Chili jam to taste
- Ground Black Pepper to taste
- Sourdough Bread 4 slices
- Swiss Cheese 0 oz
Step-by-Step Guide
Step 1
Preheat the grill in the oven.
Step 2
Boil the asparagus, cut into small pieces, in boiling water or steam for 1–2 minutes. Drain and transfer to a bowl.
Step 3
Add crab meat, finely chopped celery, diced red pepper, chopped green onion, lemon juice, mayonnaise, seasoning mix, and a little chili sauce. Season with pepper and mix well.
Step 4
Place the slices of bread on a baking sheet, top with the salad, and sprinkle cheese on top. Place under the grill until golden brown for 3–5 minutes.
