
Tempura Shrimp

Description
Shrimp can be replaced with vegetables (bell pepper, zucchini, carrot) cut into thin strips.
Ingredients
- Peeled Cooked Shrimp 15 oz
- Sparkling water 5 fl oz
- Chicken Egg 1 piece
- Wheat Flour 5 oz
- Vegetable Oil 0 qt
- Ocean salt to taste
- Meyer Lemon Juice 3 tablespoons
Step-by-Step Guide
Step 1
Prepare the shrimp in advance. Soak in very cold water with lemon juice.
Step 2
Prepare the batter: mix 1 egg with 200 ml of very cold sparkling water. Add 100 g of flour, stir, and let it rest.
Step 3
Drain the lemon water, and dip the shrimp into the prepared batter.
Step 4
Drain excess batter and fry the shrimp in vegetable oil (the shrimp should be fully submerged in oil). Drain on paper towels after frying, and season with salt to taste.
