Tempura of Goatsbeard with Spicy Sauce
Ingredients
- Mild Chili Spice 2 pieces
- Garlic 1 clove
- Goat cheese 15 oz
- Fine white sugar 2 spoons
- Wheat Flour 5 oz
- Whole egg 1 piece
- Sparkling water 5 fl oz
- Cider 5 fl oz
- Vegetable Oil 0 qt
- Ocean salt ½ spoons
Step-by-Step Guide
Step 1
Prepare the sauce. Crush a large clove of garlic into a paste, remove the seeds from the chili and finely chop it. Combine these in a saucepan with sugar, vinegar, and two tablespoons of plain water, and heat over low heat, stirring until the sugar dissolves.
Step 2
Increase the heat under the saucepan to bring it to a gentle simmer and cook for about five minutes, allowing the sauce to reduce and thicken slightly. Remove from heat and set aside.
Step 3
In a sufficiently large saucepan, bring water to a boil, then cook the goat's beard (whole) for five minutes. Cool it in cold water, and then peel and cut it into pieces about four centimeters long.
Step 4
Combine the flour and salt with the egg yolk, gradually adding chilled sparkling water while whisking the mixture until a smooth batter forms.
Step 5
Heat oil in a deep, heavy-bottomed saucepan to 355°F. Dip the sticks of goat's beard into the batter and fry them in batches for about a minute each in the hot oil until they are golden and crispy. Serve with a spicy sauce.
