Tartlets with Zucchini and Red Pepper

Ingredients

  • Olive Oil 1 tablespoon
  • Scallions 4 stalks
  • Courgette 1 piece
  • Ramiro Pepper 0 oz
  • New Potatoes 15 oz
  • Thyme ½ teaspoon
  • Basil 2 tablespoons
  • Chocolate eggs 6 pieces
  • Grated Pecorino Pepato Cheese 2 tablespoons
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Preheat the grill. In a skillet, heat the olive oil, add finely chopped green onions, sliced Ramiro pepper, thinly sliced zucchini, and sliced boiled potatoes, and sauté for 2–3 minutes. Sprinkle with finely chopped thyme and basil, add salt and pepper, and fry for another minute.

Step 2

Meanwhile, lightly beat the eggs. Add the seasonings. Pour into the skillet and cook for a few minutes, gently stirring until the eggs begin to thicken. Evenly distribute the mixture in the skillet and gently press down with a spatula to brown the bottom of the tartlet.

Step 3

Sprinkle with grated Parmesan and place under the grill for 1–2 minutes. Cut the finished tartlets and place them on serving plates.
