Tartlets with Sweet Onions, Goat Cheese, and Thyme
Ingredients
- Wheat Flour 5 oz
- Butter 5 oz
- Parmesan Cheese 0 oz
- English Dry Mustard ¾ teaspoon
- Spanish onions 2 heads
- Chocolate eggs 2 pieces
- Goat cheese 5 oz
- Thyme 19 sprigs
- Cream 5 fl oz
- Cayenne Pepper to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Sift the flour into a bowl, add ¾ of the diced butter (the butter should be at room temperature for easier mixing with the flour). Mix with a knife until a homogeneous mass is formed. Add Parmesan, ½ teaspoon of mustard, a pinch of cayenne pepper, and just over a tablespoon of cold water. Knead into a firm dough. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
Step 2
Roll out the dough into a thin layer, cut out 19 circles, and place them in greased molds. Prick with a fork, brush with beaten egg, and bake for 10 minutes at 355°F.
Step 3
For the filling, finely chop the onions and sauté in butter until golden brown (about 30 minutes). In a separate bowl, whisk the egg with the cream and remaining mustard, adding salt and pepper. Distribute the onions evenly among the cooled tartlets, spreading them across the bottom. Pour the egg mixture over the top.
Step 4
Slice the goat cheese into 19 thin pieces, placing one slice on each tartlet, garnish with sprigs of thyme, sprinkle with cayenne pepper, and bake until the tartlets are golden, about 20 minutes.
