Ingredients

  • Butter 5 oz
  • Wheat Flour 5 oz
  • English Dry Mustard ½ teaspoon
  • Cheshire Cheese 0 oz
  • Chicken Egg 1 piece
  • Balsamic Vinegar 6 tablespoons
  • Spanish onions 30 oz
  • Goat cheese 10 oz
  • Sage 2 teaspoons
  • Chopped Sage Leaves 8 pieces
  • Olive Oil 0 fl oz
  • Cayenne Pepper to taste
  • Salt to taste
  • Ground Black Pepper to taste
  • Vegetable Oil 0 oz

Step-by-Step Guide

Step 1

Mix the flour with 75 g of softened butter, add finely grated parmesan, mustard, a pinch of cayenne pepper, and 1 tablespoon of cold water. Knead into a uniform dough, place it in a plastic bag, and refrigerate for 20 minutes.

Step 2

Roll out into a thin layer and cut out eight circles. Place them in greased tartlet molds. Bake for 15-20 minutes at 355°F, then transfer to a rack to cool.

Step 3

Prepare the filling. Peel and slice the onion thinly. In a saucepan, melt 25 g of butter, add the onion, balsamic vinegar, and chopped sage, season with salt and pepper. Cook on low heat for 30 minutes, stirring constantly, until the liquid evaporates. Let cool.

Step 4

Brush the tartlets with beaten egg and place in the oven for 5 minutes.

Step 5

Cut the goat cheese into 8 pieces.

Step 6

Fill the tartlets with the onion mixture, top with a slice of goat cheese and a sage leaf brushed with olive oil. Sprinkle with cayenne pepper and bake for 20 minutes.
