- Cucumbers 0 oz
- Spanish onions 0 oz
- Truffle Oil 0 fl oz
- Quail Egg 1 piece
- Salt to taste
- Ground Black Pepper to taste

Step 1
Remove the seeds from the cucumber and dice it into small cubes, then dice the herring fillet and red onion into the same size cubes. Dress with truffle oil and mix well. Add salt and pepper to taste.
Step 2
Place a raw quail egg yolk on top.
