Tagliatelle with Pancetta

Ingredients

  • Green Tagliatelle Pasta 10 oz
  • Pancetta 5 oz
  • Marinated cherries 0 oz
  • Garlic 3 cloves
  • Dry White Wine 0 fl oz
  • Parmesan Cheese 0 oz
  • Fresh basil leaves 3 tablespoons
  • Olive Oil 2 tablespoons

Step-by-Step Guide

Step 1

For the sauce, cut the pancetta into thin strips (if pancetta is unavailable, it can be replaced with smoked bacon, but it must be sliced thinly, it will still be delicious).

Step 2

Grate the Parmesan cheese using a coarse grater.

Step 3

Crush the garlic with the flat side of a knife and chop it finely.

Step 4

Remove the basil leaves from the stems and chop them roughly.

Step 5

Cut the cherry tomatoes in half.

Step 6

In olive oil, sauté the pancetta over low heat, after 2 minutes of cooking, add the garlic and sauté, stirring constantly.

Step 7

After another 2 minutes, add the tomatoes and sauté for about 2 more minutes, then add the white wine and simmer for another 2 minutes.

Step 8

Cook the tagliatelle according to the package instructions, then drain the water.

Step 9

Remove the pancetta from the heat, add the tagliatelle, and mix well.

Step 10

Serve topped with basil and grated Parmesan or Grana Padano.
