Tagliatelle with Crab Meat

Ingredients

  • Pasta shells 15 oz
  • Olive Oil 3 tablespoons
  • Onion 2 pieces
  • Garlic 2 cloves
  • Red Long Chili Peppers 2 pieces
  • Crab Meat 0 oz
  • Crab Meat 10 oz
  • Chopped Sage Leaves 6 tablespoons
  • Salt 2 teaspoons
  • Ocean salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Divide the dough into two parts. On a floured surface, lay out the two parts and roll them out to the thickness suitable for your pasta machine. Dust the strips with flour and pass them through the machine until the strips are smooth, flat, and even. If the strips become too long, cut them in half.

Step 2

Cut the strips into tagliatelle using the pasta machine and hang them on a floured rolling pin.

Step 3

Finely chop the onion, garlic, and peppers. Heat the oil in a pan over low to medium heat, add the onion, garlic, peppers, season with salt and pepper, and wait until the vegetables start to soften. Add the finely chopped brown crab meat, stir, then add the peeled white crab meat and parsley. Remove the pan from the heat and keep warm.

Step 4

Bring a large pot of water to a boil over high heat. Add salt and immediately drop in the pasta, stirring quickly and covering with a lid. Bring back to a boil. Remove the lid and slightly reduce the heat. Cook the tagliatelle for 2–3 minutes, stirring occasionally, until the pasta is tender.

Step 5

Drain the tagliatelle well in a colander and transfer to a large bowl. Drizzle with olive oil, gently toss, add the crab mixture, and gently toss again to ensure the pasta is fully coated in the mixture. Serve immediately. You can drizzle with olive oil again if desired.
