Tabbouleh with feta cheese and avocado
Ingredients
- Bulgur ½ glasses
- Yellow Cherry Tomatoes 10 oz
- Avocado 2 pieces
- Radish 4 pieces
- Scallions 4 stalks
- Cucumbers 1 piece
- Olive Oil 6 teaspoons
- Feta cheese ½ glasses
- Lemon ½ pieces
- Parsley 1 bunch
- Mint 0 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Finely chop the radishes and the peeled tomatoes and cucumber, removing seeds. Mince the green onions, feta cheese, parsley, mint, and the zest of half a lemon. Remove the skin from the avocado, discard the pit, and slice the flesh.
Step 2
Pour hot water over the bulgur (one and a half cups will be enough), cover it, and let it sit for forty-five minutes — the grains will absorb the water and become tender.
Step 3
Drain in a colander, spread the bulgur on a clean towel and pat dry, then mix with tomatoes, cucumber, radishes, cheese, lemon zest, and herbs.
Step 4
In a small bowl, whisk together the oil and lemon juice, then season with salt and pepper. Use two tablespoons of the mixture to dress the avocado, and drizzle the remaining dressing over the bulgur, mixing well.
Step 5
Arrange the tabbouleh on plates and add a few spoonfuls of avocado to each serving.
