Sweet potatoes stuffed with broccoli and feta
Ingredients
- Sweet Potato 2 pieces
- Broccoli ¾ cup
- Olive Oil to taste
- Ginger-Garlic Paste 1 teaspoon
- Chili Flakes a pinch
- Feta cheese 3 tablespoons
Step-by-Step Guide
Step 1
Pierce the sweet potatoes with a fork in several places, place them on a paper towel, and microwave on high for 8 minutes, turning them over after 4 minutes, until cooked through.
Step 2
Lightly blanch the chopped broccoli florets in a pan with a small amount of salted water for about 3 minutes. Drain.
Step 3
In a pan, heat the olive oil. Add the broccoli, minced garlic, and a pinch of red pepper flakes. Sauté for 1 minute.
Step 4
Make crosswise cuts in the sweet potatoes, open the skin, and remove a small amount of flesh. Place 1 tablespoon of feta in each and top with broccoli. Sprinkle with the remaining feta.
