
Sweet Potato with Smoked Paprika and Blue Cheese Dressing

Description
You can substitute sour cream with Greek yogurt. If the sweet potato is large, half of one tuber is enough for one serving.
Ingredients
- Sweet Potato 1 piece
- Sour Cream 5 oz
- Blue Cheese 5 oz
- White Pepper (whole) to taste
- Garlic 1 clove
- Meyer Lemon Juice 3 tablespoons
- Smoked salt ½ teaspoon
- Salt ½ teaspoon
- Olive Oil to taste
- Chili Flakes to taste
Step-by-Step Guide
Step 1
Cut the sweet potato lengthwise into strips about 0.5 cm thick. Arrange in a single layer on a baking sheet, drizzle with olive oil to taste, and sprinkle with ½ teaspoon of salt and smoked paprika. Optionally, you can add a small amount of dried chili pepper or any other spicy seasoning.
Step 2
Bake for 30–40 minutes in a preheated oven at 390°F.
Step 3
Mix the sour cream (or Greek yogurt), lemon juice, minced garlic, blue cheese, salt, and pepper (to taste) until smooth. You can crumble the blue cheese by hand.
Step 4
Serve the sweet potato with the sauce.
