- Salt to taste
Step-by-Step Guide
Step 1
Mix the sweet potato puree, hot milk, brandy, egg yolks, lemon zest, grated nutmeg, cayenne pepper, and salt.
Step 2
Stir until a thick, homogeneous mass is formed, then beat in the egg whites one at a time.
Step 3
Pour into a greased soufflé dish and bake at 390°F for 25 minutes, until the soufflé rises and turns golden. Serve with venison.
