Sweet Potato Ravioli
Ingredients
- Sweet Potato 10 oz
- Stracchino cheese 5 oz
- Citrus Zest Mix 0 oz
- Semolina 20 oz
- Egg white 6 pieces
- Milk 5 fl oz
- Carrot 0 fl oz
- Chicken Broth 10 fl oz
- Butter 5 oz
- Grated Pecorino Pepato Cheese 5 oz
- Dried Squid 5 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients. Preheat the oven to 480°F.
Step 2
Bake the sweet potato in the oven for 30 minutes.
Step 3
Sift the flour, add the yolks, milk, and carrot juice.
Step 4
Knead a firm dough, cover with plastic wrap, and refrigerate for 1 hour.
Step 5
Peel the sweet potato. Mash it with a fork and mix it with the stracciatella. Season with salt and add lemon zest.
Step 6
Roll out the dough into a thin sheet using a pasta machine or rolling pin.
Step 7
Shape the ravioli with the sweet potato and cheese filling using a pasta machine attachment or by hand.
Step 8
In a large pot, bring generously salted water to a boil and add the ravioli. Cook for 4 minutes.
Step 9
In a separate saucepan, bring the vegetable broth to a boil, then add cubes of cold butter while constantly whisking.
Step 10
Transfer the ravioli to the saucepan using a slotted spoon and add grated Parmesan. Let them sit in the sauce over low heat for a couple of minutes.
Step 11
Serve the sweet potato ravioli on plates, season with pepper, garnish with pieces of dried duck, and serve immediately.
