  • Olive Oil 4 tablespoons
  • Sweet Potato 2½ cups
  • Ham 10 oz
  • Spanish onions 1 head
  • Watercress 5 oz
  • Dijon Mustard ¼ cup
  • Chicken Egg 4 pieces
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Heat 3 tablespoons of olive oil in a large skillet over medium heat. Add the peeled and diced sweet potato, cover, and cook for 5 minutes.

Step 2

Add the diced ham, finely chopped onion, and mustard. Cover and cook for about 8 more minutes, until the sweet potato is tender and begins to brown. Season with pepper.

Step 3

Using a spatula, lightly mash the sweet potato and cook for 10 minutes until golden brown, stirring constantly and lightly mashing the sweet potato.

Step 4

Add the chopped watercress and cook for 1 minute.

Step 5

Meanwhile, heat the remaining oil in another skillet over medium heat and carefully crack the eggs. Fry the eggs sunny-side up for about 3 minutes until cooked.

Step 6

Serve the sweet potato hash on plates, placing the eggs alongside. Garnish with sprigs of watercress.
