Sweet Pepper, Tomato, and Carrot Salad for Winter

Ingredients

  • Tomatoes 210 oz
  • Sweet Pepper 105 oz
  • Carrot 35 oz
  • Onion 35 oz
  • Olive Oil 10 fl oz
  • Salt 2 tablespoons
  • Sugar 5 fl oz

Step-by-Step Guide

Step 1

Wash the tomatoes, cut them in half, and grate them on a coarse grater. Discard the skins. Alternatively, you can simply grind them in a meat grinder.

Step 2

Peel the carrots and also grate them on a coarse grater.

Step 3

Add the grated carrots to the crushed tomatoes, pour into a pot, and bring to a boil for about 10 minutes over low heat (covered). While it is boiling, prepare the other vegetables for the salad.

Step 4

Fry the onions until golden brown.

Step 5

Cut the peppers.

Step 6

Add the fried onions, chopped sweet peppers, sugar, and salt to the boiling tomatoes with carrots.

Step 7

Bring everything to a boil and simmer on low heat for 30 minutes (stirring occasionally).

Step 8

Seal the hot salad in jars and place them 'under a blanket' until cool.
