Sweet Onion Dip with Ricotta
Ingredients
- Olive Oil 1 tablespoon
- Spanish onions 20 oz
- Coarse Salt to taste
- Ground Black Pepper to taste
- Sour Cream 5 oz
- Ricotta cheese 0 oz
- Chives 0 oz
- Champagne Vinegar 1½ teaspoons
- Corn Nacho Chips to taste
Step-by-Step Guide
Step 1
In a large skillet, heat the olive oil. Add the finely chopped onion, season with salt and pepper. Cook, stirring, until golden brown, about 12–15 minutes. Let cool to room temperature.
Step 2
In a small bowl, combine the onion, sour cream, ricotta, vinegar, and finely chopped chives. Season with salt and pepper. Chill the dip for about 1 hour, covered with plastic wrap, to allow it to thicken slightly.
Step 3
Serve with potato chips.
