  • Cottage cheese 15 oz
  • Sugar 4 tablespoons
  • Chocolate eggs 2 pieces
  • Wheat Flour 10 oz
  • White Beans 1 piece
  • Vanilla extract 0 fl oz
  • Citrus Zest Mix 1 teaspoon

Step-by-Step Guide

Step 1

Place the cottage cheese in a large bowl, add the eggs, scrape the seeds from the vanilla bean with a knife, add a few drops of natural vanilla extract, sugar, grate the lemon zest, and mash all the ingredients with a fork. Gradually add the flour and knead the dough. The dough should have the consistency of thick sour cream: it should not be too stiff or too runny.

Step 2

Sprinkle a small amount of flour on the table. Using a dessert spoon, take a bit of dough, roll it in flour, and form a ball. Continue rolling until the dough stops sticking to your hands. The idea behind this technique is that there will be much more flour on the surface than in the dough itself. When baking, the tender dough will increase in volume by about one and a half times, and the flour crust will help form a structure that will hold the tender texture inside. Place the buns on parchment paper and transfer them to a baking sheet.

Step 3

Place in a preheated oven at 390°F and bake for 10–15 minutes.
