Sweet and Sour Roasted Carrots
Ingredients
- Carrot 30 oz
- Olive Oil 1 tablespoon
- Red Wine Vinegar ¼ cup
- Sugar 1½ tablespoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Preheat the oven to 430°F.
Step 2
In a small baking dish, toss the carrots with a little salt and pepper. Roast in the oven until tender, about 20 minutes.
Step 3
In a small bowl, mix the vinegar and sugar and stir until the sugar dissolves. Drizzle over the carrots, toss, and return to the oven for another 5-8 minutes, until all the liquid has evaporated.
