Sweet and Sour Roasted Beets with Red Onion
Ingredients
- Yellow Beets 6 pieces
- Olive Oil 5 fl oz
- Spanish onions 2 heads
- Red Wine Vinegar 2 tablespoons
- Honey 1 tablespoon
- Capers 1 teaspoon
- Chopped Sage Leaves 0 oz
Step-by-Step Guide
Step 1
Preheat the oven to 365°F.
Step 2
Place the beets and onion in a baking dish, cover with foil, and roast for about 1 to 1.5 hours until tender. Let cool.
Step 3
Peel the beets and onion and cut into small pieces. Transfer to a bowl and gently mix.
Step 4
In another bowl, combine olive oil, vinegar, honey, capers, and parsley. Pour over the beets and mix. Serve at room temperature.
