Sun-Dried Tomatoes with Spicy Herbs

Ingredients

  • Tomatoes 5 lbs
  • Salt a pinch
  • Ground Black Pepper to taste
  • Fresh basil leaves a pinch
  • Fresh Rose Hips 3 pieces
  • Italian chopped parsley 1 bunch
  • Garlic 2 heads
  • Olive Oil 10 fl oz
  • Balsamic Vinegar 1 tablespoon

Step-by-Step Guide

Step 1

Wash the tomatoes, dry them, cut them in half, and scoop out the core and seeds with a spoon.

Step 2

Line a baking sheet with parchment paper, lightly grease it with olive oil, and place the tomatoes on it. Sprinkle with salt, pepper, and herbs, drizzle with balsamic vinegar, and add a small amount of olive oil. Place the rosemary sprigs on top. Put the baking sheet in the oven at 210°F for 5–6 hours (if your oven doesn't have a fan, you can place a wooden spoon to create a small gap for ventilation).

Step 3

Meanwhile, sterilize clean jars and lids and dry them thoroughly. Once done, remove the baking sheet and start packing the tomatoes into the jars. Warm the olive oil for pouring. Layer the ingredients: tomatoes, garlic, sprinkle with herbs, add rosemary sprigs, and pour hot oil over. Once the jars cool, place them in the refrigerator. Store for no more than a month when closed, and no more than a week once opened.
