  • Water 4 cups
  • White Beans 1 can
  • Rosemary 2 sprigs
  • Spanish onions 1 head
  • Sun-Dried Tomatoes 1½ cups
  • Spanish onions 1 head
  • Salt to taste
  • Minced garlic 2 cloves
  • Ground Black Pepper to taste
  • Boiling water 1 cup
  • Meyer Lemon Juice 2 teaspoons
  • Parsley 0 oz
  • Pide bread 10 pieces

Step-by-Step Guide

Step 1

Soak the beans overnight or according to the package instructions.

Step 2

Cut the red onion in half.

Step 3

Finely chop a small yellow onion into cubes.

Step 4

Drain the water in which the beans were soaked.

Step 5

Boil 4 cups of water, adding the halved onion and sprigs of rosemary. Add the beans and cook for about 1.5 hours, until the beans are very soft. Let the beans cool.

Step 6

Soak the rosemary and set it aside.

Step 7

Place the cooled beans, finely chopped onion and garlic, sun-dried tomatoes, and chopped rosemary in a food processor to blend and mix the ingredients thoroughly.

Step 8

Then add more olive oil and lemon juice.

Step 9

Add salt, pepper, and cayenne pepper to taste and blend again in the food processor.

Step 10

While continuing to mix, pour in the boiling water until the sauce reaches a smooth and creamy consistency.

Step 11

Before serving, transfer the sauce to a bowl.
