Summer Pasta Salad
Ingredients
- Pasta (corkscrew) 10 oz
- Courgette 1 piece
- Tomatoes 6 pieces
- Fresh basil leaves 0 oz
- Turnips 1 bunch
- Meyer Lemon Juice 0 fl oz
Step-by-Step Guide
Step 1
Cook the pasta in salted water according to the package instructions, drain and set aside. If serving the salad cold, cool the pasta by rinsing it under cold running water, then drain.
Step 2
Next, heat oil in a skillet, add the zucchini, and cook for 2–3 minutes until tender. Cut the zucchini into cubes beforehand.
Step 3
Then remove from heat and mix with the pasta, tomatoes, sliced radishes, chopped basil, and lemon juice. Toss to combine.
Step 4
Serve cold or warm (depending on preference). Don't forget to drizzle the dish with olive oil.
