Suluguni Sticks
Ingredients
- Water 5½ liters
- Wheat Flour 30 oz
- Corn Flour for Polenta 10 oz
- Semolina 10 oz
- Suluguni Cheese 1½ kilograms
- Coarsely Ground Rye Flour 5 oz
- Chocolate eggs 2 pieces
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In boiling water, gradually add the flour and semolina, stirring constantly, and cook for 10–15 minutes on low heat until the mixture thickens to a puree-like consistency.
Step 2
Grate the suluguni cheese on a fine grater, add it to the mixture, and stir. Add salt and pepper.
Step 3
Spread the mixture onto a greased baking sheet, evenly distribute it, and refrigerate for 1 hour.
Step 4
Carefully flip the cheese mass onto a table and cut it into sticks 2 cm wide and 7–10 cm long.
Step 5
Dip each stick in lightly beaten egg, coat in corn flour, and fry in vegetable oil until golden brown.
Step 6
Serve with tkemali sauce, ketchup, or another sour sauce.
