Description
Sulguni fried with tomatoes is a light snack that takes no more than ten minutes to prepare. The Georgian cheese sulguni is delicious on its own as well as in combination with vegetables, especially when served hot. At high temperatures, the milk evaporates from the cheese, and the flavor changes dramatically, acquiring a pleasant smokiness. The key to success is to use only fresh cheese, which is best purchased at a market where you can taste it. Young cheese has a squeaky texture when bitten into and is close to white in color. You can either grate the cheese or slice it into thin rounds and arrange it on top of the tomatoes. If you can find real Yalta onions, which are sweet in flavor, it's best to use them. Otherwise, before cooking, the sliced red onions should be briefly scalded with boiling water and then rinsed with cold water.

- Tomatoes 20 oz
- Spanish onions 5 oz
- Suluguni Cheese 15 oz
- Parsley to taste
- Vegetable Oil 0 fl oz
- Chopped Green Onions to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Slice the tomatoes and onions into rings.
Step 2
Grate the sulguni cheese.
Step 3
Chop the herbs and mix them with the oil, salt, and pepper. Combine the tomatoes, onion, and herbs, then place them in a portion-sized ceramic baking dish. Top with sulguni cheese.
Step 4
Bake in an oven preheated to 200–430°F for 7–10 minutes. When serving, garnish with cilantro leaves.
