Stuffed Zucchini with Vegetables
Ingredients
- Tomatoes 1 piece
- Young zucchini 1 piece
- Onion 1 head
- Cheese Spread 5 oz
- Dill to taste
- Basil to taste
- Ground coriander to taste

- Ground Black Pepper to taste
- Vegetable Oil 1 tablespoon
Step-by-Step Guide
Step 1
Peel the zucchini, cut in half, and scoop out the flesh, leaving walls about 5–7 mm thick.
Step 2
Blend the zucchini flesh, dill, fresh or dried basil, ground coriander, salt, and pepper.
Step 3
Dice the tomatoes and onion, and mix them with the zucchini flesh mixture.
Step 4
Brush the zucchini with vegetable oil, fill with the stuffing, and place in a preheated oven for 40 minutes.
Step 5
5–7 minutes before it's done, you can sprinkle the dish with grated cheese.
Step 6
Serve hot or cold. Garnish with fresh cilantro when serving.
