Stuffed Zucchini with Tomatoes and Mozzarella
Ingredients
- Onion 1 head
- Young zucchini 4 pieces
- Olive Oil 2 tablespoons
- Marinated cherries 5 oz
- Garlic 3 cloves
- Chopped Sage Leaves 0 oz
- Melted Cheese 5 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Cut the tops off the zucchini and carefully scoop out the flesh with a spoon, leaving walls about 1 cm thick. Finely chop the flesh.
Step 2
Preheat the oven to 375°F.
Step 3
In a skillet, heat the olive oil and sauté the finely chopped onion, minced garlic, and half of the zucchini flesh for a few minutes until softened.
Step 4
Remove from heat and add salt, pepper, halved cherry tomatoes, finely chopped cheese, and parsley. Stuff the mixture into the zucchini and place on a baking sheet.
Step 5
Bake for about 45 minutes until tender and golden brown. Serve warm or at room temperature.
