Stuffed Zucchini with Feta
Ingredients
- Courgette 2 pieces
- Marinated cherries 8 pieces
- Feta cheese 5 oz
- Arugula 5 oz
Step-by-Step Guide
Step 1
Cut the zucchini in half lengthwise and scoop out the flesh with a spoon.
Step 2
Chop the flesh into cubes and mix with the feta. Stuff the zucchini halves with the mixture.
Step 3
Cut the cherry tomatoes in half and place them on top of the stuffed zucchini.
Step 4
Place the zucchini in a baking dish and put it in the oven.
Step 5
Bake at 355°F for 40–45 minutes.
Step 6
Serve on a plate and garnish with arugula.
Step 7
You can also bake pattypan squash, but in that case, bake for 1 hour.
