  • Tomatoes 4 pieces
  • Couscous 5 oz
  • Scallions ½ bunch
  • Feta cheese 5 oz
  • Parsley 5 oz
  • Sun-Dried Tomatoes 1 tablespoon
  • Olive Oil 2 tablespoons
  • Lemon ½ piece
  • Toasted Sesame 1 tablespoon

Step-by-Step Guide

Step 1

Cut the tops off the tomatoes. Use a teaspoon to scoop out the seeds and place the pulp in a sieve to extract the juice.

Step 2

Place the couscous in a bowl, pour boiling water (225 ml), the juice from half a lemon, and the extracted tomato juice over it. Let it absorb the liquid.

Step 3

Crumble the feta, finely chop the green onions and herbs. Add olive oil. Mix with the couscous.

Step 4

Stuff the tomatoes with the couscous mixture. Garnish with sun-dried tomatoes and pine nuts.
