Stuffed Tomatoes with Cottage Cheese and Onion
Ingredients
- Tomatoes 4 pieces
- Cottage cheese 5 oz
- Passata Tomato Sauce 1 tablespoon
- Scallions 1 bunch
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Wash the tomatoes, remove the stem, and carefully cut off the 'lid'. Use a teaspoon to scoop out the insides and set them aside. Lightly salt the inside and, turned upside down, place them on napkins to drain excess juice.
Step 2
Wash and chop the green onion. Mix it with the cottage cheese. Stuff the prepared tomatoes with the resulting mixture. Cover with the 'lids'.
Step 3
Place the tomatoes in a microwave-safe dish. Pass the reserved pulp through a sieve and blend it. Mix with the tomato paste, season with salt and pepper. Pour the sauce into the dish with the tomatoes.
Step 4
Cook in the microwave for 8 – 9 minutes at 600 W.
