Stuffed Tomatoes
Ingredients
- Tomatoes 8 pieces
- Bulgur 5 oz
- Feta cheese 5 oz
- Carrot 1 piece
- Onion 1 head
- Garlic 1 clove
- Olive Oil 2 tablespoons
- Dried Rosemary a pinch
- Fresh basil leaves a pinch
- Salt to taste
Step-by-Step Guide
Step 1
Cut off the tops of the tomatoes and scoop out the flesh.
Step 2
Cook the bulgur.
Step 3
Chop the onion and garlic, sauté in 1 tablespoon of oil, add grated carrot, and simmer for 7–8 minutes.
Step 4
Add the chopped tomato flesh (without juice and seeds) to the mixture and cook for another 5 minutes.
Step 5
Combine all ingredients with the feta cheese. Lightly salt the insides of the tomatoes, add basil, and fill with the stuffing.
Step 6
Place in a baking dish, cover with the cut-off tops, and drizzle with 1 tablespoon of oil.
Step 7
Bake at 390°F for 30 minutes.
