Stuffed peppers with couscous are another interesting option for preparing stuffed vegetables. Unlike the usual filling of meat and rice, this recipe includes cheese, and the star ingredient — couscous — adds a pleasant nutty flavor to these stuffed peppers. In this recipe, there is no need to pre-cook the couscous, as it can become hard if boiled. However, it is better to blanch the peppers, which will make them more elastic and help retain their color. The filling made from zucchini, onions, sweet cherry tomatoes, and parsley is cooked in olive oil with feta cheese added. For an extra kick, you can substitute feta with any strongly flavored cheese, such as sheep or goat cheese. You can constantly experiment with the filling for stuffed peppers: use mushroom broth for the grains, add meat, nuts, or dried fruits.
Ingredients
- Chicken Broth 10 fl oz
- Couscous 5 oz
- Sweet Pepper 4 pieces
- Onion 1 head
- Olive Oil 2 spoons
- Courgette 1 piece
- Marinated cherries 5 oz
- Oregano ½ spoons
- Parsley 0 oz
- Salt to taste
- Feta cheese 5 oz
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Preheat the oven to 390°F. Place the couscous in a small bowl and pour over it boiling broth. Stir and let the broth absorb completely.
Step 2
Cut off the tops of the peppers, remove the seeds and membranes. Bring salted water to a boil in a large pot and immerse the peppers for about five minutes. Remove them and immediately place them in a bowl of cold water to stop the cooking process. Then, gently pat the peppers dry with a paper towel and set them aside.
Step 3
Thinly slice the onion and zucchini. Place them in a skillet with heated olive oil and sauté for five to seven minutes until they become soft. Add quartered cherry tomatoes, parsley, and dried oregano, and sauté for another minute before removing from heat. Add the cooked couscous and feta cheese to the skillet, season with salt and pepper, and stir to combine.
Step 4
Firmly stuff the peppers with the prepared filling, place them in a greased baking dish, and bake for about twenty minutes.
