
Stuffed Conchiglioni with Turkey and Creamy Pumpkin Sauce

Description
This dish will delight you with the unusual flavor of the sauce. I decided to modify the classic béchamel: I replaced milk with cream, omitted butter, and added pumpkin puree. The pumpkin adds a certain sweetness to the sauce, which pairs wonderfully with the cream and cheese. If you are not a fan of pumpkin, you can prepare the dish with a classic béchamel sauce. Instead of turkey mince for the filling, you can use chicken mince or pieces of chicken.
Ingredients
- Pumpkin 10 oz
- Conchiglie Pasta 30 pieces
- Turkey 15 oz
- Onion 1 head
- 10% cream 15 fl oz
- Wheat Flour 2 tablespoons
- Cheese Spread 5 oz
- Ground Black Pepper to taste
- Ground Nutmeg ½ teaspoon
- Salt to taste
- Vegetable Oil 2 tablespoons
Step-by-Step Guide
Step 1
Boil the pumpkin, cut into cubes, in salted water. Cool and puree with a blender (or using a masher).
Step 2
Put water on for the pasta. While the water is boiling, let's prepare the filling.
Step 3
Chop the onion into small cubes, place it in a preheated pan with vegetable oil, and sauté for 3 minutes.
Step 4
Add the ground turkey to the onion, mix, cover with a lid, and let it simmer for 15 minutes. Add salt and ground pepper to taste. Stir occasionally to prevent the filling from burning. You can add a little boiled water if the liquid evaporates too much.
Step 5
In a pot of boiling water, add the conchiglioni. Cook for about 10 minutes until al dente. Drain the water and rinse the pasta.
Step 6
Prepare the sauce: in a pot with pumpkin puree, add 2 tablespoons of flour, and whisk to avoid lumps. Add the cream. Place on the stove and cook until boiling, stirring the sauce constantly with a whisk. Add salt and nutmeg.
Step 7
Preheat the oven to 355°F.
Step 8
Grease a baking dish with vegetable oil. Fill each conchiglioni with the filling (about 1.5 teaspoons each), and arrange them tightly in rows in the dish.
Step 9
Pour the sauce over the pasta (it should cover the shells well, as they will absorb some moisture during cooking). Sprinkle with cheese and bake in the oven for 20 minutes.
