
Stuffed Artichokes with Mussels and Shrimp, Topped with Goat Cheese

Ingredients
- Mussels 10 oz
- Spanish artichokes 4 pieces
- Lobster tails 4 pieces
- Lemon 1 piece
- Olive Oil 2 tablespoons
- Salt to taste
- Goat cheese 5 oz
Step-by-Step Guide
Step 1
Remove the stems from the artichokes, discard the outer tough leaves, cut off the top third, and use a teaspoon to scoop out the insides. Rinse them.
Step 2
Place the artichokes in a pot. Cover with cold water, add lemon juice, olive oil, and salt. Bring to a boil. Reduce the heat to medium and cook until tender. The time depends on the size of the artichokes, but it should be at least 15 minutes. Afterward, drain the water and let them cool.
Step 3
Cook the mussel meat and shrimp tails. Clean the shrimp from the shell and other unwanted parts.
Step 4
Preheat the oven to 355°F.
Step 5
Stuff the prepared artichokes with mussels, placing one shrimp on top. Bake in the oven for 5 minutes.
Step 6
Then place a disk of goat cheese, 1–1.5 centimeters thick, on each shrimp. Wait until it browns. Serve immediately.
