Stroganoff Mushrooms
Ingredients
- Royal Mushrooms 30 oz
- Dried Chinese mushrooms 0 oz
- Dry White Wine 10 fl oz
- Onion 2 heads
- Butter 5 oz
- Sour Cream 5 oz
- Nutmeg to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Heat the wine in a small saucepan without bringing it to a boil; remove from heat, add the dried mushrooms, and let soak.
Step 2
Slice the onion and separate it into half-rings. In a skillet over low heat, melt 50 g of butter and sauté the onion. Transfer to a plate. Increase the heat and sauté 1/3 of the fresh mushrooms, periodically adding butter. Add them to the onion, then transfer everything back to the skillet.
Step 3
Chop the soaked mushrooms and place them in the skillet with the wine, season with salt and pepper. Bring to a boil and immediately reduce the heat. Simmer covered for 30 minutes. Remove from heat, add the sour cream and a portion of grated nutmeg. Warm through without boiling.
